Water does a lot of quiet damage in a commercial kitchen. Hard or untreated water leaves scale on elements, in boilers and in rinse jets. It spots glasses, clogs steam generators and makes machines work harder than they should. The right filter, kept up to date, helps stop a lot of that before it starts.

Quick answer

CES Wellington supplies, fits and changes commercial water filters — including reverse osmosis (RO), carbon and BWT specialist filters — for dishwashers and combi ovens. Our factory-trained technicians check your water treatment as part of servicing and repairs, and tell you if a filter is due for a change or isn't right for the machine. Call 0800 90 60 30 or email service@cesw.co.nz.

Why water treatment matters

Scale is one of the most common causes of the faults we see. It builds up slowly, so you often don't notice until something fails.

  • Combi ovens: scale in the steam generator and on sensors can cut steam output and lead to faults and error codes.
  • Dishwashers and glasswashers: scale on elements and in rinse arms slows heating and spoils rinse results. Glasses come out cloudy or spotted.
  • Running costs: a scaled element takes longer to heat, and descaling or replacing parts costs more than keeping water treatment on top.

A filter doesn't fix a machine that's already broken. But it helps a good machine stay that way.

Filters we supply, fit and change

We can supply, fit and change three main types of commercial water filter. They are not the same technology, and the right choice depends on your water and the machine.

Reverse osmosis (RO). RO systems push water through a membrane and strip out most dissolved minerals. The result is very low-mineral water, which is popular for glasswashers and dishwashers where you want spot-free glasses and crockery straight out of the machine. RO is a different process from cartridge ion-exchange filters.

Carbon filters. Carbon filters reduce chlorine, taste and odour, and catch fine particles. They're often used as a pre-filter ahead of other treatment, or wherever cleaner, better-tasting water helps the equipment.

BWT specialist filters. BWT makes several different specialist filter ranges for commercial kitchens — they are not all the same. One range we work with is BWT bestprotect, which is designed to reduce hardness-forming calcium, help prevent limescale and gypsum (calcium sulphate) deposits, and keep a high pH in the filtrate to help minimise corrosion risk. Official BWT material positions bestprotect for steam generation in combi steamers, ovens and steam cookers, as well as other catering uses. Other BWT ranges do different jobs (for example remineralising low-mineral water, or RO systems for dishwashing) — we match the filter to the machine and the water, not the brand name alone.

Not sure which one you need? Tell us the machine, make and model, and what you're seeing. We'll point you in the right direction. We don't sell or fit water softeners.

Water treatment checks on every service

When our factory-trained technicians service or repair a dishwasher or combi oven, they check the water treatment too. That means looking at what filter is fitted, whether it's due for a change, and whether there are signs of scale getting past it. They can fit a new filter or change a cartridge on the same visit.

It's also part of our dishwasher hygiene check, alongside wash and rinse temperatures, dosing and electrical safety. You get an electronic service report on every job, with gas or electrical certification as required.

How often filters get changed. On CES Wellington jobs, filter cartridges are usually swapped every 6 to 12 months, depending on throughput. That is our workshop practice. Manufacturer guidance for BWT cartridge filters separately recommends replacing regularly after about 6 months, and at the latest after 12 months or when the filter's capacity is reached — whichever comes first. Capacity depends on your water hardness and how much water the machine uses, so a busy kitchen can need a change sooner. Planned maintenance is usually every 4 or 6 months, or quarterly for kitchens trading 7 days or long hours. That's a good time to keep filter changes on track, so they don't get forgotten.

Machines we look after

We're service agents for Winterhalter, Hobart, Washtech, Convotherm, Moffat, Turbofan, Rational, Blue Seal, Bakbar, Waldorf, Middleby, Merrychef and TurboChef.

For dishwashers and glasswashers, we also service and repair Starline, Classeq, Meiko and Eurowash. We service and repair Unox ovens too.

Our water-filter work on this page is focused on dishwashers, glasswashers and combi ovens — not coffee machines.

FAQ

Do I need a water filter on my commercial dishwasher or glasswasher?

In most kitchens it's worth having one. Scale builds up on elements and rinse jets, which slows heating and spoils rinse results. A reverse osmosis system or a suitable BWT specialist filter helps keep the machine working as it should. Our factory-trained technicians can tell you what suits your machine and water.

What's the difference between reverse osmosis, carbon and BWT filters?

Reverse osmosis removes most dissolved minerals for very clean, low-mineral rinse water. Carbon filters reduce chlorine, taste and odour and catch fine particles. BWT specialist filters are a family of products with different jobs — for example BWT bestprotect is aimed at cutting limescale and gypsum deposits and helping with corrosion risk on steam equipment, while other BWT ranges do different work. We match the filter to the machine.

Can you check my water treatment when you service my combi oven?

Yes. We check water treatment as part of servicing and repairs on dishwashers and combi ovens, and note it on your electronic service report. On our jobs, cartridges are usually swapped every 6 to 12 months depending on throughput. Manufacturer capacity and time limits can mean an earlier change.
