Keeping your combi oven cooking
A combi oven does a lot of the cooking in many kitchens. A bit of daily care, timely descaling and knowing when to call a technician keeps it reliable and cuts down on breakdowns.
Watch: Robbo and Kiri on combi oven care
Why combi care matters
In Kitchen Talk Episode 5, Robbo and Kiri talk about keeping your combi oven cooking. Combis work hard with steam and heat. When cleaning cycles get skipped, filters go overdue or scale builds up, faults show up as service messages, weak steam or an oven that won't heat properly.
What your team can do day to day
- Run the automatic cleaning cycle as the manufacturer describes
- Wipe the outside, door glass and controls when the oven is cool
- Note any service message or error, and take a photo of the display
- Keep water filtration and descaling on the schedule in the operator manual
